How to bake puff pastry

  1. To begin with, we thoroughly wash the dried apricots and clean them of any husks and ponytails. After that, finely chop it. Pour into a saucepan, pour grated zest and sugar on top. Stir, add water and put on fire - boil for about 1-2 minutes, then remove from the stove and set aside to cool.
  2. Next, roll out the dough to a thickness of about half a centimeter. We divide our dough into 7x7 cm squares, more or less depending on the preferred size of the buns. We make cuts along the edges of each square. We spread the filling in the center and glue the two edges as follows - on both sides we got straps because of the cuts, first we pull them up to raise the edges, and then we bring them together and draw one strap into the other - so we get something like tubules, and our filling will look out from above between the straps (see the picture for more details).
  3. Put the buns on a greased baking sheet and let rise for 15-20 minutes. As they rise, grease with a beaten egg and put in the oven for 10-15 minutes at a temperature of about 250 degrees (consider the parameters of the oven and the size of the buns). Enjoy your meal!

Buns with dried apricots and cottage cheese

  1. First, melt the butter and heat the milk. In a deep bowl, mix flour, yeast and 160 grams of sugar. We add our milk to this bowl, and then pour in 2 eggs, which should be beaten with a fork first. After that, we begin to knead the dough - in the process, add melted butter in small portions. Once the dough is ready, put it in a warm place for one and a half to two hours, covered with a towel.
  2. In the meantime, you can work on the filling. To do this, we take cottage cheese and pass it through a meat grinder or grind it in a mixer - at the exit we need a homogeneous, smooth mass. Next, add the egg and the rest of the sugar, then beat thoroughly. We take dried apricots, wash them, clean them from husks and debris, and then cut them into smaller pieces.
  3. When the dough rises, divide it into two parts and roll both into two rectangles. Spread the curd mass equally on top of each and sprinkle evenly with dried apricots. Next, each layer should be folded in half to make a roll. We cut each into equal pieces (buns will be of this size). Each rectangular piece (bun) should be twisted in the middle.
  4. Next, put our buns on a baking sheet covered with parchment, and leave them to rise. In the meantime, we heat the oven to 180 degrees and, as the buns rise, we send them to bake for 20-30 minutes.

Prunes baking recipe

  1. We warm the milk a little more than room temperature and pour a tablespoon of sugar into it, and then crumble the yeast. Mix everything until dissolved.
  2. Next, sift a little more than a third of the flour into the mixture. Then we mix it all with a spoon until the whole mass becomes homogeneous - this is how we get dough. We take the dough and put it in the oven for about 35 minutes, preheated to 40-45 degrees. During this time, it will acquire a sour smell of fermented yeast and bubbles will appear on the surface, plus everything - it will increase by 2-3 times, so take a larger container.
  3. Next, stir the dough until smooth without bubbles and pour salt, the rest of the sugar and butter(no need to heat, it will melt itself in a warm dough), stir everything. Next, sift the flour (but not all, leave about 80-100 grams). Knead the dough - in the process, add the rest of the flour. When kneading, you can grease your hands with oil so that the dough does not stick. Next, send the dough to the oven at 40-45 degrees for about an hour, during which time it will rise by about 2-3 times.
  4. In the meantime, we take the ingredients for the filling - dried apricots and prunes. We wash them, remove the husks, ponytails and bones from prunes. We cut our filling smaller and leave until the dough is ready.
  5. As an hour passes, we take out the dough and divide it into 15-20 balls the size of an apple. We roll them up well and cover with a film for 10 minutes. Then we take and crush each ball, and put our mixed filling in the center, after which we pinch the edges right above the filling. Turning the buns with the seam down, we crush them and make cuts in a circle (any pattern), and after that we grease with a beaten egg and sprinkle with sesame seeds - a pinch per bun.
  6. We shift the buns to a baking sheet and send them to the oven for 20 minutes at 200 degrees.

Buns "Roses"

  1. First, defrost the dough. While it comes to room temperature, prepare the filling. We wash dried apricots with raisins, clean them from all kinds of husks and debris. After that, we cut the dried apricots smaller, pour boiling water along with raisins and sprinkle with sugar, leave to infuse.
  2. We take the dough. There are two ways to sculpt rose buns:
    1. For the first method, we just need to roll out our dough into a layer, sprinkle with sugar (if you want sweeter buns) and spread the filling evenly on it. After that, we roll the layer into a roll and cut it into thick washers - the buns are stuck together.
    2. For the second method, you need to roll out the dough into a layer, cut it into strips and sprinkle each strip with sugar, then spread the filling evenly on each strip and twist it into a rosette. The first method is good because it is simple and fast, but in the second it looks more aesthetic, you determine the shape of the future rose yourself and as a result you can cut and dissolve the “petals” a little so that after baking the buns are more like roses.
  3. As you blind, you can send the buns to a baking sheet covered with parchment and oiled. We certainly grease the buns with beaten egg yolk and (if you want sweeter) sprinkle with sugar.
  4. We send it to the oven at 250 degrees for 15-20 minutes, depending on the power of the oven. Enjoy your meal!
