Green cranberry jam. cranberry jam for health

Many housewives like to make preparations for the winter. Therefore, since autumn they begin to make preparations, pick berries, sterilize jars, crush and boil the resulting mass. Have you ever tried cranberry jam? If yes, then you probably remember this wonderful sweet and sour taste.

Cranberry jam without instant cooking

There is a lot of controversy about whether boiled berries retain their beneficial features and precious vitamins. But cranberries are richly endowed with useful trace elements and help strengthen the immune system. We suggest you "kill two birds with one stone" at once. No matter how strange it may sound, but you can make jam without cooking. Cranberry jam without cooking has already gained enough popularity among housewives.

In order to make jam we need:

  • 1 kg of sugar;
  • 1 kg fresh cranberries.

First you need to sort out all the berries well. We immediately weed out all the damaged and cracked, remove the leaves and motes.

For "raw jam" prepared without cooking, disinfection is very important!

After sifting, transfer the berries to a colander and rinse well. Wet berries need to be dried, we do not need excess moisture. You can spread the berries on a paper towel, so they dry faster.

After these procedures, the berries must be ground to a mushy state. It is best to use a meat grinder for this, but a blender may also work. If neither is on hand, place the berries in a simple, clean bowl and crush with a masher.

When the berry mass is prepared, pour sugar into it (optimally granulated sugar). Sugar is added to taste, in a ratio of 1 to 0.5 or 1 to 1 berries / sugar. Then again carefully mix the resulting mass. Wait until the sugar dissolves, stirring the mixture occasionally.

While the sugar is dissolving, you need to prepare jars for preserving the jam. Banks should be as clean as possible. Rinse them with hot water. The lids also need to be washed, but it is better to boil in boiling water for 3-5 minutes. Disinfection for "raw jam" is very important.

When everything is ready, place the jam in the jar without reporting 1-2 cm to the lid. Fill this space with sugar and roll up the lid. This "sugar plug" will help protect the jam from bacteria and allow it to last longer. Place jars of jam in a cool place, in a cellar or refrigerator. Enjoy your meal!

Cranberries with sugar for the winter without cooking: Recipe 1

From one kilogram of ripened berries (whole, not wrinkled and not spoiled) and the same amount of granulated sugar, an excellent jam is obtained with an output of three jars of 0.5 liters each. The berries are sorted very carefully (after all, the quality of the dish depends on it) so that a first-class delicacy comes out.

Cranberries need to be “hardened” in boiling water, poured into a colander and dipped a couple of times in rather hot water. Then it is spread on the covered surface of the table and dries. It is even advisable to repeat the washing procedure 2-3 times, since, nevertheless, the raw materials will not be boiled and the technology for preparing berries should be sustained responsibly. The term of storage of jam will depend on the degree of purity. Do the same with cranberries and with.

Qualitatively prepared fruits are ground in a blender. Focusing on the amount of processed products, grinding is carried out in several passes, that is, in portions. Although, among the methods existing in cooking, you can grind with a food processor or in a meat grinder. The only drawback: in the meat grinder, the berries burst, and the juice can splatter everything around, and the peel clogs the appliance's mesh and needs regular cleaning. In the blender, up to 500 g of the original product is placed, and, after 5 minutes, on the recipe " Cranberries with sugar for the winter without cooking quickly» in the presence of an excellent homogeneous berry puree.

The prepared puree is transferred to a clean, dry enameled container and mixed with a kilogram of sugar. This 1:1 ratio applies to currants, raspberries and other berries. By the way, in some cases they make a ratio of 1: 1.5, which allows you to store treats even with moderate coolness. The mixture is stirred until the crystals disappear, and left for 3-4 hours on the kitchen table, stirring regularly for abundant juice release and final dissolution of sugar.

The finished mass is filled with pre-sterilized glass jars of small displacement and closed with nylon lids. Also, the container can be hermetically rolled up on a turnkey basis. The place of storage is a refrigerator or a cold cellar, where healthy and amazingly tasty “live” jam will stand for more than one month.

Recipe 2

To clog cranberries “under the sugar cork”, sugar is required a little less than in the previous recipe. So, for a kilo of berries you will need 0.85-0.9 kg of white sweet crystals. The output of the product has a not so sweet, even sugary aftertaste, as they say, in moderation; but this does not lose its term of storage. It is preserved by the crust formed on the surface of the workpiece from the running berry juice with sugar. And thanks to the “cork”, air access to the product is prevented.

A properly rinsed and thoroughly dried berry is rubbed in a convenient way, covered with 3 cups of sugar and placed in the cold until the next day. During the night, enough juice will run in and dissolve grains of sand. According to the sample, the cranberry substance is laid out in 500-ml sterilized jars.

Circles are cut out of parchment paper with a diameter slightly larger than the width of the container (literally 2 cm) and placed directly on the surface of the raw jam. 2-3 tablespoons of sugar are poured onto each circle, and the containers are closed with plastic lids, taken out into the cold until frost.

It is possible to prepare grated sweet cranberries for freezing and storage in the freezer. For this purpose, take:

1.5 kilos of cranberries,

0.2-0.25 kg of granulated sugar.

Berries for the proposed dish are prepared in the traditional way: they are washed, if possible dried and wiped in the simplest, most convenient way. Then delicious cranberries with sugar for the winter without cooking packaged in clean containers (glass or plastic) or poured into bags and hidden in the freezer. By the way, sugar can be mixed with the berry mass or simply sprinkled on top (subsequently, when thawing, the ingredients will still mix). Also, cranberry puree is frozen without sugar at all, while maintaining the natural taste.

A good result is given by the technology of making “live” grated cranberry jam with orange. The acidity of the berries is effectively complemented by citrus notes and a characteristic aftertaste. From the ingredients for goodies you will need:

1 kilogram of cranberries,

0.2-0.3 kg orange,

1.5 kilos of sugar.

According to the recipe How to cook cranberries with sugar for the winter without cooking» The berries are preliminarily thoroughly rinsed with cold water, dried and wiped or scrolled in a meat grinder. They do the same with an orange, but be sure to peel it off and parse the pulp into slices. Homogeneous masses are combined and covered with sugar.

The mixture is placed in a water bath and heated. But in no case should it be boiled! The purpose of heating is only the dissolution of sweet grains. The cranberry-citrus treat is laid out warm in jars of small displacement and sealed with lids. The blockage cools at room temperature and is removed in the refrigerator. An amazing tonic and healthy drink is prepared from this blank.

Another way to prepare grated cranberry-orange jam involves the presence of the following components:

1.5 g of berries,

1.5 kg of thin-skinned oranges,

3 kilos of granulated sugar.

Vanilla is also added to the dessert, but quite a bit, just to set off the taste, but not to clog it.

The sorted cranberries are washed, dumped into a colander, and then on a towel for high-quality drying. Ripe oranges (without peeling!) are rinsed with warm water; you can even use a soft brush when washing, removing all rubbish and chemicals from the fruit, which are processed by citrus importers. Carefully processed oranges are cut into slices along with fragrant peel. And so that it does not taste bitter, you need to soak the fruits in hot water (about 70 degrees) for up to 5 minutes.

Citruses with berries are turned through a meat grinder. At the same time, granulated sugar can also be skipped for its further rapid dissolution. Raw dessert is poured into jars, closed; storage is supposed to be in a moderate cool dark room.

Candied cranberries are sure to become a favorite treat for kids. In principle, ordinary grated cranberries mixed with sweet sand are also considered candied, but in this recipe the berries remain whole and resemble candy-vitamins. For cooking you need:

500 g berries

500-600 g sugar,

In some cases, powdered sugar is used, which does not require as much time to dissolve, unlike crystals.

The berry crop is moved, washed out. If possible, each fruit is pierced with a sewing needle or toothpick, so that they are properly saturated with syrup. Water is poured into an enameled container and boiled with more than half of the sugar until the grains disappear (approximately it takes 3-4 minutes). Cranberries are poured with hot syrup. The container is covered with a towel or lid and left overnight in a cold place or even in the refrigerator. Sometimes cranberries are saturated during the day, after which the syrup is drained from it and used for some other purpose or preparation. And the berries directly from the syrup - while still wet - are rolled in sugar or powder, dried and poured into a dry container or a plastic container. For storage, "sweets" are removed in the cold.

Or an orange treat is definitely a great treat. But you can look at these blanks from the other side, and make them as an effective remedy for winter colds. In this case, preparing original cranberries with sugar for the winter without cooking, and even better - with honey. Honey itself is an excellent anti-cold product, and in combination with berries it exhibits amazing properties that are beneficial to the body.

To prepare the "medicine", the fruits are sorted with special care, washed and pureed with an immersion blender. After the resulting puree is mixed with natural (necessarily fresh!) honey and laid out in pre-sterilized jars. According to the ratio of ingredients, the following proportion is maintained: for 100 g of berry puree - 2-3 tbsp. honey. Having closed the container with nylon lids, the containers are placed in the cold.

And you can also add lemon. Then the cold remedy will become a panacea for the flu. In this version, 0.5 kilo of cranberries is combined with? a glass of honey (preferably liquid linden) and one crushed lemon. Selected berries are ground in a meat grinder along with citrus and stirred, pouring honey in a thin stream. The finished mass is packaged in half-liter jars, closed and placed in the refrigerator. In individual situations, when raw or at least honey is performed, it must be remembered that this shortens their term of suitability and imposes more stringent requirements on storage conditions.

The last recipe has nothing to do with preparing grated berry puree with sugar crystals. But from this it is no less in demand in a wide range of cranberry preparations. These are berries in their own juice or, as they are called, in their natural form, which are prepared both with and without sugar. For the recipe, you will need a seaming container (washed and sterilized by steam or in the oven). Cranberries are sorted, removing low-quality and wrinkled ones, put in a saucepan and blanched for about 5 minutes.

Then the berries are scattered in jars and poured with boiling water. To the berries, even before pouring the steep pitch, you can add sugar to taste, and then it will dissolve and mix with water and the released cranberry juice, which will make the twist more expressive and tasty. Next, the container is covered with tin lids and sterilized in a water bath for up to half an hour. It remains only to roll up the containers, turn them upside down and wrap them until they cool. A cool cellar or basement is considered an ideal place to store conservation.

According to the second method of blocking cranberries in their own juice, the berries are prepared in the same way as in the previous method and other recipes " Cranberries with sugar for the winter without cooking delicious". Only the filling is carried out not with boiling water, but with cranberry juice heated to 75-80 degrees. Juice is used ready (store) or self-prepared. For the latter option, cranberry fruits are “driven” through a juicer, squeezed and the liquid is kept on the stove over moderate heat to the desired degree of heating. Jars filled with berries and juice are covered with iron caps and sterilized for about 30-40 minutes. It is very convenient to use a multicooker to heat juice; brought to a specific - required - temperature, without guessing, as in the case of a stove.

Cranberry jam is a wonderful dessert, not only tasty, but also very healthy. Take the time and effort to prepare a couple of jars of this wonderful delicacy. Especially since it's so easy!

The most useful preparations for the winter from berries are without heat treatment. Cranberries are also no exception, because they contain many useful substances, for example: pectin and carotene, oxalic, citric and quinic acids, as well as vitamins B2, C, P and many others. The fruits of this plant are best kept fresh, especially since they do not deteriorate in wooden barrels all year round, being filled with chilled boiled water. However, not only in apartments, but also in country houses, there is not always the possibility of such storage of berries, so the best solution would be to make jam without boiling.

So that five-minute cranberry jam prepared for the winter does not require heat treatment, you will need 2 times more sugar for every kilogram of berries. Fruits should be washed in running water and lightly dried on a clean paper towel. It is not necessary to sort through, since there is almost no spoiled cranberry due to its sour astringent taste, but separate the leaves and motes. Next, we grind the berries through a sieve with a special crusher, the cake and seeds should be completely dry after squeezing the pulp, they can later be used when cooking or jelly. We mix the resulting cranberry jam with sugar until it is completely dissolved, put it in jars, cover with plastic lids and put it in the refrigerator.

The classic recipe is more suitable for those who do not have room for blanks in the refrigerator compartments. Cranberry jam recipe allows you to make both grated and whole berries, with further boiling for 20 minutes, in this case, the twists for the winter will be perfectly stored on the shelves in the pantry or in the cellar. But traditionally, for harvesting 1 kilogram of berries, you need 1.5 kilos of sugar and a quarter liter of water. We dry the washed cranberries in a colander and prepare syrup at this time by boiling water and pouring all the sugar into it. Next, immerse the berries in the syrup and cook in it, removing the foam with a slotted spoon. Cranberry jam is ready when a drop that falls on a plate holds its shape and does not spread. Then pour into sterilized jars, close and, turning over, set to cool.

A sign that the berries were poorly washed and cleaned of specks will be a slightly dirty foam during cooking.

We cook cranberries with fruits, there are never too many vitamins

The most common variant of cranberry jam in combination with certain fruits of fruit trees is cooking it with apples. For 1 kilogram of berries, you should have half a kilo of apples, from 1.5 to 2 kilos of sugar (to taste and depending on the sweetness of the apples) and, accordingly, 2 or 2.5 glasses of water. You will also need a pinch of cinnamon and vanilla. Cooking begins in the same way as in the classic recipe, in parallel with cooking, blanch peeled and sliced apples in a separate container, immersed in boiling water for 10 minutes. At the end of blanching, we immerse the fruit slices in the berry mass and cook until tender, finally adding cinnamon and vanilla. Next, roll up in sterilized jars and, turning over, cover with a blanket for the night.

Few housewives know how to make cranberry jam in a slow cooker with apples. The proportions of the components will be slightly different than in the previous recipe, the bulk will be apples, for 1 kilo of which you will need only 300 grams of berries. This will save sugar due to the sweetness of apple pulp, only 1 kilogram of sand will be enough. First, wash, peel and cut the fruits into slices, simultaneously removing the cores, and for this time we place the cranberries in freezer. Next, place the peel from the peeled fruits in a slow cooker, pour two measuring cups of water and simmer for 20 minutes, then drain the water into some container.

Next, throwing out the peel, put apple slices and granulated sugar in the slow cooker, set the timer for 1 hour and leave to stew. After the specified time, fill the slices with a decoction of the peel and pour out the berries. It remains to switch the technique to baking and again indicate 1 hour. We do all this with the lid removed, only after laying the cranberries, you can briefly close the slow cooker and then open it again. When the timer signals readiness, pour the jam into sterilized jars and roll up with metal lids for the winter.

Cranberry jam with quince turns out to be very tasty if there are too many green ones among the collected berries. So, we take 400 grams of quince fruit for every kilo of a mixture of ripe and green cranberries (the second should be no more than a third). You will also need a small, half-finger-long piece of ginger. First, we make sugar syrup by pouring it into boiling water. Then put the diced quince into the pan and cook for 20 minutes. Next, add ginger and ripe berries and continue to boil until the mass thickens, after which we add green cranberries. Cook for another 20 minutes, until the cranberry jam becomes thicker. We pour it into jars and close it for the winter.

Experimenting with Ingredients in Cranberry Jam

If you know the classic recipe, you can make various options blanks for the winter, supplementing with various components - nuts, orange or lemon zest, star anise. Another interesting experiment for many, replace sugar with honey. This is available primarily in rural areas, where an apiary is located nearby. Cranberry jam is prepared traditionally, but instead of 2 kilos of sugar we take 1.6 kilograms of honey and cook syrup from it, adding 2-2.5 glasses of water. Then we put the berries and then cook strictly according to the recipe you have chosen, even if it is with the addition of apples or quince. Honey greatly increases the shelf life of the workpiece and increases its usefulness. Walnuts with hazelnuts. Apricot and apricot seeds also have good taste. Let's go back to the classic recipe when the sugar syrup is ready and the berries are already put in it. We pre-cook the peeled nuts for half an hour in a separate container, without salt or sugar, just boil. When the jam thickens, crush the nucleoli, transfer to a basin with a sweet berry mass and cook for about 5 minutes. Then we lay out on the banks and immediately close, not allowing to cool. To avoid sudden cooling due to a draft, turn over.

We act in a similar way if we make cranberry jam with lemon or orange zest. Similarly, we start by using classic recipe, after rubbing the orange on a grater. Having brought the berry mass to half-cookedness, we throw orange zest into it and then cook until thick. To get cranberry jam with a lemon-vanilla smell, we cook the zest in the same way, but cook the berries over low heat in clean water, and only when they become soft, add sugar, along with grated lemon and a pinch of vanilla. Then it remains to boil the sweet mass until the sugar is completely dissolved, that is, about 20 minutes.
