Pizza is not a frequent guest on my table. In principle, I decided a long time ago with my preferences. My favorite is Margherita. But when I saw this recipe, I couldn't pass it up. Delicate ricotta, rich tasting white, fragrant garlic and parsley...

I recommend it to all lovers of pizza, as well as wild mushrooms. This is delicious. And now it's in season. That's why I bring the recipe. manyasha_p at FM "Autumn Marathon".

But before giving the recipe, let me give you a little advice on working with porcini mushrooms. When I see my mom fry them, my heart bleeds. First, she puts all the mushrooms in a large colander, puts them under a strong stream of running water, washes thoroughly, cuts the wet ones, throws the whole bunch into a saucepan and “fries”. I put this word in quotation marks for a reason. Because, in fact, mushrooms are stewed, and not even in their own juice, but in the water that they have absorbed like a sponge. By the way, when noble mushrooms are boiled before frying, my heart does not just bleed, but breaks into pieces. I feel so sorry for these creatures...

1. We sort through the mushrooms. If there is a lot of debris on them, remove it with dry hands.
2. Turn on cold water with a thin stream, wash each mushroom separately, trying not to get water on the bottom of the cap, where the fungus has a spongy structure.
3. We immediately blot the washed mushroom from all sides (including the bottom of the cap) with a paper or textile towel.

To make pizza we need:
250 g flour of the 1st grade,
125 ml warm water
5 g yeast
500 g small or medium whites,
250 g ricotta,
2 cloves of garlic
a few sprigs of parsley
pecorino or parmesan
butter.

1. For the dough, mix water, flour and yeast. Knead, leave warm for 1.5-2 hours. I delegate this work to the bread machine.

2. Grind the garlic and parsley.

3. We cut mushrooms arbitrarily. One small mushroom can be cut lengthwise so that the shape of the mushroom is "read" on the cut - useful for decoration.

4. In butter and high heat, fry the mushrooms in portions. So that the mushrooms are fried, and not stewed in own juice, it is important that there is enough free space in the pan.

5. Knead the ricotta with a fork.

6. Mix fried mushrooms with garlic and parsley.

7. From the approached dough, stretch the circle for pizza, lay it on baking paper. Grease the dough with ricotta, spread the mushrooms on top.

8. Sprinkle the mushroom filling with grated pecorino. We send it to the oven preheated to 220-230 degrees for 10-15 minutes.

9. Cut hot pizza into portions and serve.

Stir with a fork. Heat up to a temperature of 35 degrees half a glass of tap (!) Water. In a bowl, beat an egg with a fork, pour 3-4 tbsp into the egg. olive oil, mix and pour in warm water. Pour the egg mixture into the flour and quickly knead the dough. The dough should be soft and not sticky to your hands. Roll into a ball and leave in a warm place for 45-60 minutes until the dough has doubled in size.

After the dough has risen, knead it and roll it into a cake with a thickness of 5-7 mm. Put the dough on the mold, after lightly brushing it with olive oil. Be sure to prick the dough with a fork in several places.

Put the ricotta on the dough and sprinkle it with oregano. Throw in the pickled onion

Sprinkle with 2-3 pinches of dried oregano.

Put the pickled onion on top, dividing it into “straws”.

Sprinkle with parmesan and parsley mixture. The pizza will turn a beautiful greenish color. Pleasing to the eye!

Arrange the mozzarella pieces on top of the topping. It doesn't matter if the slices are thick, the mozzarella will melt when cooked and form thin sections of cheese.

Peel the pod of pickled hot pepper from seeds and stalk, and with a sharp knife cut into strips along the entire length of the pod. Make 6-8 strips and lay them on top of the pizza. Pepper will give the finished pizza a slight spiciness. If desired, they can then simply be removed and not eaten. Whoever likes it.
