Ingredients:

    Potatoes - 5 pieces

    Chicken egg - 1 piece

    Chicken fillet - 300 grams

    Champignons - 300 grams

    Onion - 1 piece

    Flour - 1-2 tablespoons

    Butter - 50 grams

    Cream 20% - 150 milliliters

    Vegetable oil - 2 tablespoons

    Salt, pepper - to taste

It doesn't take much time to cook delicious zrazy. You can do it all in an hour. First of all, wash the potatoes, peel them, cut them and put them to boil. When it boils, you need to salt it and you can forget about it for about 20 minutes.

At this time, you can start preparing the filling. Chicken fillet, you can take the thighs, having previously cleaned them of the bone, we pass through a meat grinder. Mushrooms are cut into 4 parts and cut into thin slices. Peel the onion and finely chop.

Heat up a frying pan with vegetable oil. We send a bow to it. As soon as it becomes transparent, add mushrooms. Mix everything, salt and pepper. Mushrooms must give up water. When it has completely evaporated, add half butter and fry mushrooms with onions until tender. This will take us 4-6 minutes.

Adding to the pan minced chicken and mix intensively so that it is distributed into small fractions. Let all the water that comes out of it completely evaporate. We send cream to the pan. Constantly stir so that they envelop all the ingredients. The cream will give the minced meat the right texture and juiciness. At the same time, the filling should become almost dry. Having achieved this effect, remove it from the fire.

At this time, the potatoes are already cooked. Drain the water, add the remaining butter and mash into a puree. There shouldn't be lumps here. Let it cool down a little and put the chicken egg into it. Mix well with a silicone spatula or hand. If you are afraid that your zrazy will spread, to be sure, you can add 1-2 tablespoons of flour or a spoonful of potato starch. They will make the dough sticky.

From mashed potatoes we form balls, the size of which depends on the desired size of the zraz. Wet hands with water, flatten the ball into a circle. Put the stuffing in the middle and carefully pinch everything together.

It is better to roll prepared zrazy in breadcrumbs, so they will acquire a golden hue and definitely will not stick to the pan.

Warm up in a frying pan sunflower oil. We spread the zrazy on it, let them “grab” and reduce the fire a little below average. They shouldn't burn. Fry for about 1-2 minutes on each side. Remove from the pan and transfer to a baking sheet.

We heat the oven to a temperature of 150 degrees. Cover the fried zrazy with foil and put in the oven for about 20-30 minutes. during this time they will reach, steam, be soft, but with a crispy crust.

Prepare for chicken and mushroom zrazy fresh sauce. To do this, finely chop your favorite greens - perfect, dill, parsley or mint. Mix it with natural yogurt or low-fat sour cream, season with salt and pepper to taste. You can literally add 1 clove of garlic for spiciness.

  1. First you need to prepare the chicken fillet. We wash it under cold water, and then remove the films, remnants of connective tissues and fat. If you took the brisket, then also remove all the bones and skin.
  2. Cut the fillet into small pieces - so it will cook faster, place in a small saucepan and pour cold water so that it completely covers the meat. We put on fire and cook until cooked. Half an hour is usually enough to completely cook the loin.
  3. While our meat is cooking, we'll take care of the potatoes. It needs to be thoroughly washed and sent to cook right in its uniform - this is how we save starch, which means that in the future it will be easier to sculpt zrazy from potatoes.
  4. When the potatoes and chicken are cooked, remove them from the water and let cool. Then peel the potatoes and three on a coarse grater.
  5. Add chicken eggs to the potato mass, one hundred grams of softened butter, a little salt, pepper and set aside for a while.
  6. Peel the onion, cut into small cubes. We grind the chicken in a meat grinder. Pour a little sunflower oil into the pan and fry the onion on it until golden brown.
  7. We also spread the minced chicken here, salt and pepper to taste. Stir and fry for about 5 more minutes. Remove from fire and let cool slightly.
