With currant preparation

Baking with currants is very fragrant. The berries seem to open in the oven, saturating the dough with summer aromas. If you have a bag of frozen berries left in the freezer, we quickly take it out and make a pie.

We will need:

  • 200 ml of kefir;
  • 3 eggs;
  • currants, grated with sugar - 1 cup;
  • soda - dessert l;
  • a glass of sugar;
  • a pinch of salt;
  • 70 ml of vegetable oil;
  • 2 cups of flour.

From flour, eggs, knead the dough on a kefir basis. Add sugar, stir until it dissolves. Pour part of the dough on the bottom of the mold, and on top - spread the currants with sugar. Pour the second part and send the currant charlotte to bake in the oven at a temperature of 200 degrees for 40 minutes. Sprinkle the finished cake with grated chocolate, and eat with a hot latte.

jellied pie

The jellied pie will turn out moist, grainy-tender if you knead the dough on sour cream and add semolina instead of flour. Jam is better to take without sourness. Strawberry jam is ideal: it will make the delicacy look like desserts that are so loved in the East.

Prepare:

  • 200 ml sour cream;
  • 100 g of semolina;
  • 3 eggs;
  • strawberry jam - 1 cup;
  • baking powder - dessert l .;
  • half a glass of sugar;
  • a pinch of salt.

Mix semolina with sugar and sour cream, leave for a couple of hours to swell. Beat the eggs in a separate bowl, gradually stir into the semolina dough. Season with vanilla. Pour half of the dough into a mold, spread the strawberry jam on top. Try to do everything carefully, because the mass is quite liquid. Pour in the rest of the dough and put in the oven. Bake for 35 minutes at 200 degrees.

Ready jellied pie can be additionally soaked in syrup: mix a teaspoon of honey with water (150 ml) and pour it over a warm cake. The delicacy turns out to be fragrant, satisfying, not too sugary. We recommend preparing a milkshake for the pie and enjoying a pleasant meal with the whole family.

If you decide to use yeast dough, let it rise, then cut into small balls and leave again for a while so that they fit. After that, roll the balls into cakes, put the jam filling in the center of each, form pies, let them come up too, and only then grease with a beaten egg and send to the oven, heated to 180-200ºС. After 20-25 minutes, pies with jam are ready. It's time to put the kettle on the stove and set the table!

750 g flour
500 ml milk
8 g dry yeast
50 g sugar
3 eggs,
55 g butter,
zest of one orange
95 ml vegetable oil,
250 ml raspberry jam.

Cooking:
Combine all dry ingredients. Pour the barely warm milk into the dry mixture along with the beaten eggs and vegetable oil. Before kneading, add orange zest to the dough. Roll the dough into an elastic ball, cover it and put it in a warm place for 1 hour to rise. Then roll it out, divide it into pieces, roll out a cake from each, put jam in the center and pinch the edges. Place the pies on a baking sheet, brush with melted butter and send to bake in an oven preheated to 180ºС for 30 minutes.

Yeast pies with currant jam in the oven

Ingredients:
For test:
5 stack flour,
500 ml milk
35 g pressed yeast
2 eggs,
4 tbsp. l. vegetable oil,
5 st. l. butter,
5 st. l. Sahara,
vanillin, salt - to taste.
For filling:
1 stack currant jam.

Cooking:
Prepare the dough: dissolve the yeast in warm milk, add 1 tbsp. l. sugar and 2 cups of sifted flour. The consistency of the dough should resemble thick sour cream. Cover the dough with a towel, place in a warm place and leave to rise for 25 minutes. In the meantime, beat the egg whites in a stable foam, rub the yolks with 1 tbsp. l. sugar to a white airy mass. Add egg yolks to egg whites and mix well. Pour the prepared egg mixture into the approached dough, add vanilla, salt, melted butter and 2 cups of sifted flour. Knead the dough well and season it with vegetable oil. While continuing to knead the dough, gradually add the remaining flour, bringing the dough to an elastic state. Leave the finished dough warm for 25-35 minutes so that it rises well and brightens. Put the dough on a cutting board, roll it into a ball, hit it several times to expel all the air from the yeast mass, sprinkle the dough with flour and leave for 7 minutes. Then roll out the dough on a table sprinkled with flour into a layer 1 cm thick, cut out circles, put 1 tsp in the center of each. currant jam, pinch the edges well and form pies. Put them on a greased baking sheet, brush the top of the pies with a beaten egg or vegetable oil and place in an oven preheated to 200ºС for 30 minutes until golden brown. Be sure to cover the finished pastry with a towel, this will protect it from drying out.

Pies with strawberry jam

Ingredients:
500 g flour
250 ml milk
50 ml of water
7 g dry yeast
50 g butter,
1 egg
5 st. l. Sahara,
1-2 tbsp. l. starch,
½ tsp salt,
400 g strawberry jam.

Cooking:
Sift flour, mix it with salt, dry yeast and sugar. Add soft butter to the flour mixture and rub everything into crumbs. Then pour a little milk and water into the flour mixture and continue to knead the dough until it stops sticking to your hands. Cover the finished dough with cling film and leave in a warm place until doubled in volume. Punch down and let it rise again. Knead the dough a little again and let it rise again. Put the dough on the table, form a sausage out of it, divide it into pieces and let them lie down for a long time. Roll each piece into a cake and put the filling in the center - a little jam mixed with starch. Connect the edges of the cakes and form pies. Line a baking sheet with parchment paper, lay out the pies, cover with cling film and leave to rest for 30 minutes. Then grease the pies with a slightly beaten egg, put in an oven preheated to 180-200ºС and bake until golden brown.

Pies with apricot jam and pumpkin

Ingredients:
250 ml milk
10 g yeast
flour - how much dough will take,
1 tsp Sahara,
1.5 tsp salt,
1 egg
8 art. l. vegetable oil,
250 g apricot jam
100 g pumpkin.

Cooking:
Dilute yeast in milk, add sugar and leave for 5-7 minutes. Then add salt, vegetable oil, flour to the mass, knead a soft dough, put it in a plastic bag and leave for 40 minutes. In the meantime, reheat the apricot jam, if it is liquid, add some starch to it and reheat. If the jam is thick, then this can not be done. Grate the pumpkin on a fine grater and add to the jam, boil everything together for 5 minutes and cool. Punch down the risen dough lightly, divide it into equal balls and shape into patties. Line a baking sheet with parchment paper and place the patties seam side down. Let them lie down on a baking sheet for a while, then brush them with an egg, send them to the oven, heated to 180ºС, and bake until done.

Pies with pear jam and walnuts

Ingredients:
sweet yeast dough (prepared in any way you are used to),
300-400 g pear jam,
100-150 g walnuts,
3 strips of orange peel,
45 ml milk.

Cooking:
Knead the rich yeast dough in any of the ways you like and leave it to approach. To prepare the filling, combine grated orange zest with pear jam and chopped walnuts. Then heat this mixture over medium heat until boiling and cool. Form the pies, put on a baking sheet covered with parchment paper, grease the surface of the pies with milk and put in the oven, preheated to 180ºС, bake until browned.

Fried pies with strawberry jam on kefir

Ingredients:
500-700 g flour,
500 ml of kefir,
2 eggs,
½ stack Sahara,
50 g yeast
1 pinch of salt

Cooking:

Ingredients:
1 package of ready-made yeast puff pastry,
Cherry jam,
1 egg

Cooking:

700 g flour

Mix all ingredients and knead elastic dough which does not stick to hands and remains soft. Leave the finished dough to stand for 2 hours in a warm place. Divide the dough into pieces and shape into patties. Place on a baking sheet lined with baking paper, brush with egg yolk and send to the oven preheated to 180ºС for 20 minutes to bake until golden brown.

Pies with nut jam from pumpkin dough

Ingredients:
600 g flour
300 g pumpkin puree,
2 eggs,
1 sachet dry yeast
3 art. l. milk,
60 g butter,
2 tbsp. l. honey,
½ tsp salt.
For filling:
500 ml of green walnut jam (it can be replaced with cherry, pear, quince), but that will be a completely different story.

Cooking:
Grate the pumpkin on a fine grater. Drain the syrup from the jam. To make the pumpkin dough, combine ⅓ flour, pumpkin puree, honey, salt, 1 egg and 1 egg white, yeast and milk. Stir, add melted butter and, stirring, another ⅓ flour. Knead the elastic dough, cover it with a towel and put it in a warm place for 2 hours. Punch down the risen dough while adding the remaining flour. Make cakes from the dough and form pies. Put on a baking sheet covered with parchment paper and oiled, let them stand for 10-15 minutes, brush with egg yolk, beaten with 1 tsp. milk, and put in an oven preheated to 200ºС for 20-25 minutes.

Yeast fried pies with apple jam

Ingredients:
For test:
5 stack flour,
20 g regular yeast or 1 tbsp. l. dry (optional)
5 st. l. vegetable oil,
500 ml milk
2 tbsp. l. Sahara,
a pinch of salt,
vegetable oil - for frying.
For filling:
homemade apple jam.

Cooking:
Combine vegetable oil, yeast, salt and sugar, add warm milk and, continuing to stir, gradually add flour. Place the resulting viscous dough in a bag and refrigerate for 40 minutes. Sprinkle the surface of the table with flour, lay out the dough, sprinkle with flour and smooth with your hands. Using a cup, cut out circles, in the center of each circle put apple filling, pinch the edges and shape into patties. Fry the pies in a pan with vegetable oil, over low heat, under the lid, so that they are well baked and turn out to be lush and ruddy.

Pies with jam "Viennese"

Ingredients:
400 g flour
100 g sugar
8 egg yolks,
200 g butter,
100 g semi-sweet wine,
200 g jam with sourness,
cinnamon and powdered sugar - to taste.

Ingredients:
Remove the butter from the refrigerator, let it stand for 10-15 minutes, then cut into pieces. Sift the flour and grind it with butter until fine crumbs, add the egg yolks, and then all the other ingredients, knead a homogeneous dough that does not stick to your hands. Roll the finished dough into a sausage and divide into small pieces. Roll each piece of dough into a not very thin strip, grease each with melted butter and stack one on top of the other. Wrap a stack of strips in cling film and refrigerate for 2 hours. Then roll out this structure with a thickness of about 0.3 cm and cut out circles, which can also be rolled out slightly. In the center of each circle, put a little jam filling (ideal in this case is jam from black currant) and mold the pies by folding the stuffed mugs in half. Pinch the edges carefully and place not too close together on a greased baking sheet. Bake in an oven preheated to 200ºС for 15-20 minutes. Finished pies, when cool a little, sprinkle with cinnamon and powdered sugar.
