1. Boil carrots and mushrooms until tender. I cooked it in a slow cooker, but this is not necessary and you can simply cook it on a burner.
2. I disassembled the herring and cleaned it of skin, bones, and fins. I cut the herring into beautiful fillets.
3. Then I chopped the herring fillet into small cubes. I also chopped the champignons into pieces and grated the (medium) onions. You can grind all this in a blender if you wish, but personally I prefer to chew “something” rather than eat a homogeneous mass.
4. I put half of the grated onion in a plate with herring, and added the other half to the boiled mushrooms.
5. Special point: mushrooms and onions can be boiled for 15 minutes in a water bath or, like me, in a slow cooker. To do this, I took a plastic shallow plate, put mushrooms on it and placed it on the double boiler. This is purely my preference; if you like raw onions and mushrooms, then you don’t have to do this step.

7. Covered with a new sheet, which was covered with mayonnaise on top.
8. Next, I put mushrooms and onions on a new wafer sheet. I generously spread them with mayonnaise. Please note that I did not immediately cover the herring with sauce; again, this is my personal wish.
9. Then I repeated the placement of the remaining herring on my waffle cake and coated the new waffle with mayonnaise.
10. Boiled carrots chopped into cubes. According to the previous scheme, I covered it with a sheet of wafer. I spread mayonnaise on the carrots.
