Let's start preparing the base of the banana cake by whisking four eggs and 70 g of sugar in a deep bowl with a mixer. You need to beat until the sugar is completely dissolved, you can try with your finger - if there are any grains. Then, into the egg mixture, we introduce a little bit of flour sifted with a teaspoon of baking powder.

Initially, I indicated 200 g of flour in the list of products, there is a caveat here: the dough for a homemade banana cake should be of the consistency of thick sour cream, therefore we introduce flour in small portions. It is possible that the entire amount will not be needed. I repeat once again: the dough should spread, but with difficulty.

Next, set the dough aside, take a detachable form and crumble 100 g of oil into the bottom of the form with small pieces, trying to distribute evenly along the bottom. Sprinkle the top of the butter generously with breadcrumbs. In my opinion, a very tasty banana cake is obtained when there are a lot of bananas in it.

Before pouring the dough into the mold, finely (1 cm x 1 cm) chop a couple of bananas and add to the dough, and then pour it evenly into the mold with a spoon. We send the form to the oven heated to 180 degrees, for 20-25 minutes.

With this article, I wanted to convince you of the opposite: a banana cake can be prepared quickly and quite simply, and this recipe will confirm this.

Bananas are known to be one of the most effective natural "antidepressants". Bananas contain a record amount of nutrients that promote the production of serotonin - the so-called happiness hormone. Eating bananas, according to scientists, is not only a sure way to defeat the autumn blues, but also prevent depression and support the body in case of chronic fatigue and constant lack of sleep.

Without noticing it myself, I often cook dishes with bananas precisely in the autumn-winter season, when the weather is depressing and the sun is especially acutely lacking. I have already collected a whole selection of desserts and pastries with bananas, but this banana cake is my absolute favorite. Having cooked it once, I return to it again and again.

At first glance, this is a simple and familiar biscuit with cream, but a little trick in the cooking process allows you to give the cake an amazing aroma and unforgettable taste.

This cake could be called thrice banana or absolutely banana, because bananas are present in every part of it. From weightless and fluffy biscuit to cream, layers between cakes and, of course, decorations. The autumn blues just don't stand a chance! Let's pamper ourselves!

Prepare the ingredients according to the list.

The amount of bananas for the cake can be adjusted to your taste. I needed 5 medium-sized bananas, provided that bananas are involved in cooking at each stage.

250 grams of banana pulp will be needed for a biscuit (I got 2 pieces). The remaining bananas are used as a fruit layer, decoration and cream component.

Cream for banana cake can be used any, to your taste. I have an oil cream with the addition of banana puree.

Let's start with the very "trick" that will give the cake a unique aroma and taste. Let's prepare a banana-caramel sauce, which will become a component of our biscuit.

For the sauce, measure out 150 grams of powdered sugar and add 25 milliliters of water.

Bring to a boil over low heat and simmer until the mixture turns into a golden red caramel. Keep an eye on the syrup, watching the change in its color, if necessary, slightly shake the container, but do not stir.

In the meantime, cut the bananas into small pieces, no larger than 2 centimeters.

When the caramel is ready, add the banana pieces, 1 tablespoon of butter and a little vanilla to the bowl.

Continue to simmer the mixture over low heat until the banana pieces are soft and the mixture thickens. I am always in a hurry and after a few minutes I start stirring the sauce. As you stir, the banana pieces will dissolve into the caramel, resulting in a thick caramel-banana sauce. The consistency is somewhat reminiscent of jam or thick jam.

It doesn't look like much, but the aroma and taste are simply magical. I want to abandon all further cooking, sit in a corner and eat it right away.

Cool the finished sauce before adding to the dough.

For the dough, mix flour, baking powder and baking soda. Add, if using, ground spices. Sift two or three times. Add the bran and large particles of wholemeal flour that will remain in the sieve back to the sifted mixture.

Beat 100 grams of powdered sugar, vegetable oil and room temperature eggs until thick and bubbles appear. I also add a few drops of flavorings - rum, vanilla and almonds.

Add banana caramel sauce and yogurt and mix well.

Add sifted flour mixture and stir until smooth.

Pour the batter into a greased and lined with baking paper mold.

Bake in an oven preheated to 180 degrees for 50 minutes. After 15-20 minutes, when the top of the biscuit is browned, reduce the temperature to 160 degrees.

Turn off the oven and leave the cake in the oven for another 10-15 minutes. Then turn over and leave on a wire rack to cool completely. I am not patient and take out the biscuit on the balcony for a speedy cooling.

After a while, when the biscuit has cooled down on the outside, but still quite warm inside, I cut it into 2 parts and leave it to cool completely.

For cream: cut a banana into small pieces, add lemon juice (I have the juice of half a lime) and grind until mashed. It is better to take a slightly unripe banana - the cream will be more dense. Add lemon juice to taste - so that the puree is not too sour, but also does not darken due to its lack.

Butter at room temperature, not too soft (if touched with a finger, there should not be a hole), mix with a small amount of powdered sugar (100-150 grams to start). Blend until smooth, 5-7 minutes. Continuing to beat in small portions, gradually add the banana puree and powdered sugar. Refrigerate the finished cream.

Lubricate the cooled cake with cream, lay out a layer of bananas cut into thin slices. Apply a layer of cream on the inside of the second half of the cake and set it on top.

Brush the cake layers and top of the banana cake with the remaining cream.

Decorate as desired.

The finished cake should be allowed to brew for several hours or overnight in the refrigerator, but we always break this rule and immediately eat a piece.
